Street Corn Salad
I was craving street corn salad without the hassle of husking and grilling and chopping fresh corn - enter frozen corn! I used a bag of frozen fire-roasted corn from Whole Foods and loved it - huge money and time saver and so flavorful. Enjoy this one!
Ingredients:
1 bag frozen corn (no need to thaw)
1–2 tbsp neutral oil (like avocado or canola)
1/3 cup mayonnaise
1/4 cup Greek yogurt
1/2 cup crumbled cotija or feta cheese
1/2 tsp smoked paprika
Juice of 1 lime
1/4 cup chopped cilantro
1/4 cup chopped scallions
1/2 an avocado, diced
1/2 jalapeño, finely chopped (optional)
Salt & pepper to taste
Grilled chicken, for serving
Instructions:
Preheat oven to 425°. Line a baking sheet with foil. Toss frozen corn with oil on baking sheet; bake for 20–25 minutes, stirring once or twice, until corn is golden and slightly crisp with some brown spots.
Let the corn cool slightly, then toss with mayo, sour cream, cheese, paprika, lime juice, cilantro, avocado and jalapeño.
Season with salt and pepper to taste.
Serve with grilled chicken and more cotija cheese. Enjoy!
