The caption is no joke - this is THE best tomato recipe of all time. And the best part? You can mass produce these and put them in any recipe you want. In a day, I’ve had 3 meals, 3 different dishes and all of the above have contained these tomatoes. Or, just eat them as is…no one’s really looking. :)
Slow-Roasted Tomatoes
Total time: 2 hours, 15 minutes (including 2 hours rest time)
Makes ~2 cups roasted tomatoes
Ingredients:
1.5 lb cherry tomatoes
2 cloves garlic
1/4 cup olive oil
1 tbsp dried oregano
salt & pepper
Preparation:
Preheat oven to 250°.
Cut cherry tomatoes in half & spread into a single layer on a nonstick 9x13 baking sheet.
Smash garlic cloves & toss onto baking sheet.
Mix with olive oil, oregano and S&P and give it a good shake.
Place in oven and roast for 2 hours. Mix the tomatoes around about halfway through.
Remove from oven and enjoy in ANY recipe of your choice! You can’t go wrong.
