Same-Day Focaccia

If you have a sudden urge for focaccia but didn’t have the foresight to prep the dough overnight, have no fear - this version is made day-of and is JUST as delicious as the classic!
Ingredients:
4 cups all-purpose flour
2 tsp kosher salt
2 ¼ tsp (1 packet) instant yeast
1 ½ cups warm water (about 105–110°F)
¼ cup olive oil, plus more for pan and topping
1 tsp honey
Flaky salt for topping
Instructions:
In a large bowl, whisk together the flour, salt, yeast, warm water, olive oil, and honey. Mix with a spatula or your hands until no dry flour remains. Dough will be sticky and shaggy.
Cover bowl with a damp towel or plastic wrap and let rise in a warm spot for 1 ½ hours, until doubled and bubbly. (Pro tip: If your kitchen is cool, place the bowl in an OFF oven with the light on or on top of a warm appliance.)
Generously grease with butter and then oil a 9x13” pan with olive oil. Transfer the dough to the pan and use oiled fingers to gently stretch it to the edges. Cover and let rise again until puffed and very bubbly - about 1-1.5 hours.
While dough is finishing its second rise, preheat oven to 425°. Once ready, drizzle the top of the dough with olive oil and use your fingers to dimple it all over. Add flaky salt and any toppings if desired.
Bake until golden brown on top and the bottom sounds hollow when tapped, 25-30 minutes. Let cool in the pan for 10 minutes, then transfer to a wire rack.
Cool completely before slicing horizontally into sandwich slabs. Enjoy!
