Ingredients:
1 cup all-purpose flour
1/3 cup warm water (plus 1–2 tbsp more if needed)
1 tsp active dry yeast
1/2 tsp sugar
1/4 tsp salt
1 tbsp olive oil
Instructions:
In a medium bowl, stir together warm water, yeast, and sugar. Let sit for ~5 minutes until foamy.
Add flour, salt, and olive oil. Use a fork or spatula to stir until combined into a shaggy dough. If it looks too dry, add 1-2 tsp more warm water.
Cover the bowl with a clean towel or plastic wrap. Let it rise in a warm spot for 2-3 hours, or until doubled in size.
Dust your surface with a little flour. Divide the dough into 4–5 pieces. Gently flatten and shape into 1/4-inch thick circles using your fingertips - no need to roll!
Heat a dry skillet (cast iron or nonstick) over medium-high. Cook each pita for 1-2 minutes per side until puffed and golden brown. If they don’t puff, they’ll still be soft and delicious.
Brush warm pitas with olive oil and sprinkle with flaky salt or za’atar. Enjoy!
