The perfect side dish for any summer barbecue!
Ingredients:
8 oz dry couscous
1/2 cup crumbled goat cheese
1 cucumber
1 ear corn, shucked and diced into kernels
1/4 of a red onion
1/4 cup olive oil
Fresh mint leaves
Salt & pepper, to taste
Instructions:
Prepare couscous according to package directions; let cool.
Dice cucumber, red onion and peach into small pieces.
Chop mint leaves.
Combine all ingredients in a large bowl; mix and serve immediately.
This goes well as a side for any type of protein, and I especially like to serve it with grilled chicken (and a crisp glass of rosé!)
