Panko-Crusted Goat Cheese

My favorite crispy topping for any salad!
Ingredients:
1 log of goat cheese
1-2 large eggs, beaten
1 cup panko breadcrumbs
1/2 cup all-purpose flour
Neutral oil, for frying
Instructions:
Unwrap goat cheese log from plastic wrap and place on a small piece of parchment. Freeze for 10-20 minutes until slightly hardened.
Set up three small bowls for your dredging station: one with flour, one with panko breadcrumbs and one with beaten egg.
Remove goat cheese from freezer and cut into 1/2” rounds using a sharp knife.
Coat each round in flour, then egg, then breadcrumbs.
Place a saucepan on your stovetop on medium heat. Coat the bottom with oil.
Place panko-crusted goat cheese rounds in the pan; fry for about 2 mins per side, or until golden-brown and crispy.
Serve immediately or place into an airtight container and refrigerate for 2-3 days. To reheat, use an air fryer and air fry for about 5 minutes at 385°.
