Chocolate Chip Cookie Cake
Yields one 9" cookie cake | Prep time: 15 mins | Cook time: 25-30 mins | Cool & Frost: 30 mins
The perfect birthday treat for the guest of honor who would actually prefer cookies on their special day!
Ingredients:
For the cake:
½ cup unsalted butter, room temp
½ cup brown sugar, packed
⅓ cup granulated sugar
1 large egg + 1 egg yolk, room temp
1 ½ tsp vanilla extract
1 ⅓ cups all-purpose flour
½ tsp baking soda
½ tsp salt
¾ to 1 cup chocolate chips, plus more for topping
For the buttercream (for piping):
¼ cup unsalted butter, softened
¾ cup powdered sugar
½ tsp vanilla extract
Pinch of salt
1–2 tsp milk or cream
Instructions:
Preheat oven to 350°. Grease and line a 9-inch round cake pan or springform pan with parchment.
In a large bowl, cream butter + both sugars for 1–2 minutes until light and fluffy.
Beat in egg, yolk, and vanilla until smooth.
Add flour, baking soda, and salt and mix just until combined.
Fold in chocolate chips, then press dough evenly into prepared pan. Add extra chips on top.
Bake for 25-30 minutes, until edges are golden and center is just set. It may look slightly underdone in the middle - that’s good!
Cool at least 20 minutes before removing from pan.
Using an electric mixer, beat all buttercream ingredients until smooth. Place into a ziplock with the tip cut off or a piping bag.
Pipe buttercream around the edge and top as desired! Enjoy 🎉
